I used to go through the bother of making glazed carrots only to be frustrated at the time, money, and energy spent that usually did not yield consistent results. Then an epiphany! So I share my simple fast and delicious solution with all of you.

When you want to elevate a carrot side dish, serve these glazed carrots. It's a simple side dish you can whip up in no time. Orange marmalade adds a punch of citrus that's balanced by the spicy cayenne pepper and fresh ginger.

Ingredients For no-brainer glazed carrots

  • 1 pkg
    peeled and cleaned carrots (8 oz)
  • 1 Tbsp
    orange marmalade (sugar or sugar-free type)
  • 1 tsp
    grated ginger or teaspoon dry ginger (optional)
  • 1/4 tsp
    cayenne pepper (not hot, but you may omit or reduce)
  • 1/4 tsp
    salt
  • 2 tsp
    butter
  • 2 Tbsp
    water

How To Make no-brainer glazed carrots

We simmered for 20 minutes and the carrots were not too soft or hard. Also, if you do not like spicy, the cayenne can be omitted or cut back to 1/8 tsp.
  • Butter, salt, cayenne pepper, carrots, ginger, orange marmalade, and water in saucepan.

    In a small to medium pot with a lid place butter, salt, cayenne pepper, carrots, ginger, orange marmalade, and 2 tablespoons of water.
  • Simmering the carrots.

    Bring to a boil. Reduce heat to simmer on low heat; stir.
  • Top on saucepan while carrots simmer.

    Cover and check for the desired doneness. Some like a firmly cooked carrot, some like a softer one.
  • Checking tenderness of the carrots.

    Test with a fork to obtain your preference. Monitor water level and add more to ensure no burning.
  • Cooked carrots staying warm on the stove.

    Finish and leave on the stove with the lid on the pot while finishing up the main entry. May require a sight reheat, but there you are!

    Alternate ingredient to orange marmalade is apricot jam.
