Had a cucumber, green pepper, onion and what else to make with these ingredients is a salad. I had forgot that I use to make this often when I first got married. Made it and shared it with my neighbor which loved the taste. Cooking for two isn't easy some times. This is a keeper during these hot summer days when you don't really want to heat up the kitchen. Enjoy!

Ingredients For my cool salad for a hot summer day

1 lgtomato, cut into pieces

1 mdcucumber, peeled and sliced

1/4of a large onion, cut into slices

1 lggreen pepper, cut into pieces

1/4 capple cider vinegar
-
4 Tbspsugar ( use less for more tang ) if desired

1 tspcelery seed
-
salt and pepper to taste

top with crumbled feta chees if desired
How To Make my cool salad for a hot summer day

1Cut all vegetibals into disired size pieces along with sliced cucumber.

2Place into a large mixing bowl and add vinegar, sugar, celery seed, salt and pepper to taste and mix well to cover all.

3Cover and place in refrigerator to cool.

4Serve as a side dish along with your favorite BBQ meats.

5NOTE: Double the vegetables for a larger group of people.
