Ingredients For mushroom stroganoff

3 Tbspolive oil

1 lbfresh mushrooms, sliced-try to use at least 3 varieties

3scallions, sliced

2 clovegarlic, crushed

2 Tbspdry white wine
-
1 1/4 csour cream

1 Tbspfresh tarragon, chopped

parsley for garnish
How To Make mushroom stroganoff

1Heat oil in a large frying pan and fry the mushrooms gently, stirring from time to time until they are softened and just cooked.

2Add scallions, garlic, wine and cook for 1 minute more. Season well with salt and pepper.

3Stir in sour cream and heat but do not boil. Stir in tarragon. Garnish with parsley. Serve with rice, noodles or potatoes.
