I have always been crazy about hominy and I have always been surprised by how many of my fellow Northerners have never heard of it. I grew up with it, even though none of my family is from the South. Any time I can prepare hominy in other ways besides just "out of the can," is a good time. Enjoy! Recipe: Cookscountry.com 07-31-15

Ingredients For mother's hominy bake

2 Tbspolive oil

1onion, minced

1 can(4 oz.) chopped green chiles, drained

2 clovegarlic, minced

1 tspground cumin

2 can(15 oz.ea.) white hominy, drained and rinsed

1/2 tspsalt
-
1/4 tsppepper
-
1 csour cream
-
1 cshredded cheddar cheese
How To Make mother's hominy bake

1Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 to 7 minutes.

2Stir in the chiles, garlic, and cumin and cook until fragrant, about 30 seconds.

3Add the hominy, salt and pepper and cook until the hominy is heated through, 3 to 5 minutes. Remove from heat and stir in sour cream and 3/4 cup of the cheese.

4Transfer the mixture to a greased 8-inch square baking dish. Sprinkle the remaining 1/4 cup cheese over the top.

5Place the baking dish on a foil-lined rimmed sheet and bake in a preheated 350º oven until the sauce is bubbling and the cheese is melted, about 20 minutes. Cool for 10 minutes before serving.
