My mother grew up on a ranch in the western slopes of Colorado. Her family was from Pennsylvania. She grew up having fried cucumbers. Therefore, I grew up eating the same. I love this recipe. It has such a wonderful flavor. I hope you will also enjoy this recipe. It is so easy.

Ingredients For mom's fried cucumbers

5 mdcucumbers, sliced length wise-medium

4 lgeggs, beaten
-
1/2 ccornmeal
-
1 call-purpose flour
-
1 tspsalt
-
1 tspgarlic poweder
-
1 1/2 tsppepper
-
1/2 ccooking oil
-
additional salt and pepper
How To Make mom's fried cucumbers

1Wash and slice off both ends of the cucumbers.

2Rub each end of the cucumber in a circular motion on a cutting board until it shows a slight foam. This helps get rid of the bitterness.

3Cut cross or lengthwise 1/4 inch thickness with rind still on.

4Sprinkle the slices with salt and let them sit for 10 minutes to release excess water.

5Then pat the cucumbers dry with a paper towel.

6Beat 4 eggs in a bowl and set aside.

7Now mix your flour and spices in a separate bowl.

8Heat oil in a skillet on medium-high heat (about 350 degrees F). Don't let the oil get to hot or it will burn.

9Dip cucumbers in egg.

10Then dip in the flour mixture. If you want it crunchier, double dip in egg and flour.

11Place in hot oil.

12Cook until golden brown; 5-7 minutes turning halfway through.

13After cooking, sprinkle your salt and pepper on to taste.

14Serve hot.
