Ingredients For *** mom's eggplant casserole ***

1 lbeggplant, peeled & diced

3 mdonions, chopped

1egg, lightly beaten

salt & pepper
-
2 Tbspbutter, softened
-
1 csour cream
-
1 cshredded mozzarella cheese
-
1 critz cracker crumbs
-
1 stickbutter
How To Make *** mom's eggplant casserole ***

1Preheat oven to 350 degrees F.

2In large saucepan, eggplant & onion. Add enough water to 1" depth. Bring to boil, reduce & simmer until tender. Drain.

3In large bowl, pour mixture in & add salt, pepper & 2 Tbsp butter; mix well.

4Mix sour cream, egg & cheese in another bowl.

5In a 13 x 9" baking dish, add 1/2 of eggplant mixture. Then sprinkle with 1/2 cheese mixture on top. Repeat layers. Top with cracker crumbs, slice stick of butter into pieces & place all over top of crackers. Bake 45 minutes.
