    cooking oil
  • 1
    red pepper, chopped
  • 2 lg
    zucchini, sliced
  • 1 md
    onion, chopped
  • 1 clove
    garlic, minced
  • 10 oz
    pkg. frozen corn
  • 1/4 tsp
    salt
  • 1/8 tsp
    pepper

How To Make mexican zucchini

  • 1
    Add oil to frying pan; saute all remaining ingredients, stir and cook about 5 minutes, until vegetables are tender crisp. Makes 4 servings.
