Wanted some Mexican sweet corn but didn't want to run to the market for fresh corn, so I used frozen kernels and it was delicious.

1 bagfrozen corn, thawed

2 Tbspbutter

2 Tbspmayonnaise

2 tspcayenne pepper

salt and pepper to taste

1 ccotija or parmesan cheese
How To Make mexican corn casserole

1Cook frozen corn in the microwave as instructed.

2Mix in the butter and then the mayonnaise.

3Add the cayenne pepper about 2 teaspoons or to how much heat you want and then add the salt and pepper to taste.

4Mix in the crumbled Cotija or Parmesan cheese and microwave until heated through, about 4 minutes. Serve hot.
