mediterrean eggplant

I developed this dish after having it at a local restaurant. It has become one of our favorite meals especially in the summer when our garden is florishing. My one daughter requests this dish very often and it makes me feel good to make it for her. This is hearty enough to make as a vegetarian meal with a nice salad and a French loaf of bread. I hope you all try it and let me know what you think.

Ingredients For mediterrean eggplant

  • 1
    eggplant, sliced and fried
  • 1 can
    drained plain artichoke, chopped
  • 1
    bag thawed frozen spinach, drained
  • 3 clove
    crushed garlic
  • 1/2 c
    parmesan cheese
  • 1 lg
    onion, chopped

How To Make mediterrean eggplant

  • 1
    Add onion to frypan and brown lightly until wilted. Add all but the eggplant and mix well. Put 2 tbsp of filling into each round of eggplant and fold over. Cover pan and bake at 350 for 1/2 hour.
