mashed acorn squash

I love squash, and this one is delicious. I saved the seeds and toasted them, yummy. I actually didn't add the brown sugar or spices, but just crushed a clove of garlic and threw it into the hollow of the squash while it was baking. I do this with spaghetti squash too. Sometimes I prefer the savory to the sweet.

Ingredients For mashed acorn squash

1acorn squash
-
olive oil
-
1/4 stickmelted butter or earth balance

1/4 cbrown sugar

1 tspnutmeg or cinnamon

salt and pepper to taste
How To Make mashed acorn squash

1Preheat oven to 400'F, brush the inside of the squash with the olive oil and sprinkle with salt and pepper.

2Place on a baking sheet for 45 minutes.

3When done remove the insides of the squash and place in a mixing bowl. Add the butter, nutmeg or cinnamon and brown sugar until smooth. Serve warm.
