Ingredients For marinated vegetables

  • 3/4 cup vinegar
  • 1/2 cup vegetable oil
  • 1 tsp. salt
  • 1 cup sugar
  • 1 tbsp. water
  • 1 tsp. pepper
  • 1 17oz. can shoe-peg corn
  • 1 16 oz. can french-cut green beans
  • 1 2oz. jar chopped pimento
  • 1 cup chopped celery
  • 1 finely chopped green pepper
  • 1 chopped bunch green onions

How To Make marinated vegetables

  • 1
    Combine first 6 ingredients; bring to a boil, stirring to dissolve sugar; cool.

    Combine vegetables; then stir in vinegar mixture.

    Refrigerate, stirring occasionally.

    This is best a day after preparation, but good for a couple of weeks. This is a salad as well as a side dish vegetable.
