I am making this quick and easy marination tomato dish for this eve's supper. It is a good dish for tomatoes which lack that garden fresh, sweet taste.

Ingredients For marinated tomatoes

  • 1 to 2 lg
    tomatoes, sliced
  • 1/3 c
    olive oil
  • 1/4 c
    red wine vinegar
  • 1 clove
    garlic, minced or 1/2 tsp of jar minced garlic
  • 2 Tbsp
    fresh parsley, chopped
  • 1 Tbsp
    fresh basil, chopped
  • 2 Tbsp
    onion, diced
  • 1 tsp
    sea salt
  • 1/4 tsp
    ground black pepper
  • optional, brown sugar to taste (i use 1 tblsp)

How To Make marinated tomatoes

  • 1
    In a non-aluminum pan, place sliced tomatoes in a single layer. Mix remaining ingredients and pour/spoon over tomatoes. Cover and chill 1 to 3 hours.

    Optional, using an electric knife, cut a thin slice of lettuce off a head of lettuce and place marinated tomato slice atop to make a simple salad. The electric knife doesnt cause bruising of lettuce and no need to use salad dressing with this dish.
