I'm such a fan of fat Greek kalamata olives and pitas brands of Mediterranean feta cheese. I love the saltiness and cleanness of the taste of Feta, and its wonderful texture.

1 3/4 pkgblocks pitas feta cheese,cut into large squares

4 clovelarge garlic cloves,skinned and halved

1 Tbspwhole coriander seeds,lightly crushed

2fresh red chilies, halved and seeded

2fresh green chilies, halved and seeded

2fresh rosemary sprigs

olive oil for preserving

1large glass jar,with lid

1place olives with feta cheese,garlic,coriander,chilies and rosemary in a large glass dish,toss gently to mix.

2add the mixture into a large glass jar,and fill olive oil to the brim.

3seal the jar and place into the refrigerator until requires....
