I grew up marinating cucumbers, onions, and tomatoes every summer as a side dish. Always a great side to a summertime meal.

Anyone who grew up around a garden or a family member that gardened grew up on tomato, cucumber, and onion salad. It's a must-have summertime side dish. Angie's dressing is perfect with the right balance of tangy and sweet. Sometimes we think these salads are a little too tangy, but this one is just right. Tastes like pure summer.

Ingredients For marinated cucumbers, onions and tomatoes

    cucumbers, peeled and sliced 1/4"
  • 1 md
    onions, sliced
  • 3 md
    tomatoes, cut into wedges
  • 1/2 c
    vinegar
  • 1/4 c
    sugar
  • 1 c
    water
  • 2 tsp
    salt
  • 1 tsp
    pepper
  • 1/4 c
    oil

How To Make marinated cucumbers, onions and tomatoes

  • Sliced cucumbers, tomatoes, and onions in a large bowl.

    Toss together peeled and sliced cucumbers, tomatoes, and onions in a large bowl.
  • Sugar, vinegar, oil, water, salt, and pepper whisked together.

    Whisk together sugar, vinegar, oil, water, salt, and pepper. Whisk until the sugar is dissolved.
  • Pouring vinegar mixture over veggies.

    Pour vinegar mixture over the veggie mixture and toss.
  • Bowl covered in plastic wrap.

    Cover and refrigerate at least 2 hours before serving.
