This is a recipe my daughter invented for a vegetable tray for a a family get together. We loved them so much, I had to get the recipe. The measurements are approximate, you can change it around to fit your tastes.

4red, yellow, green peppers

1 csalsa

1/2 csour cream

1 cshredded cheddar jack cheese

How To Make mandy's cheesy salsa peppers

1Take peppers and core them, cleaning them out. Then wash them and cut them into fourths length wise, making them like scoops.

2In a bowl, mix salsa and sour cream. Add spices. Mix in cheese. If mixture is too runny, you can add additional shredded cheese to thicken.

3Fill each pepper scoop with filling. Refrigerate util ready to serve. When placing on plate or tray, alternate pepper colors for a colorful addition to any veggie tray.
