makeover zucchini bread

Lightened my usual recipe by using less oil, sugar and eggs. Using some whole wheat flour does make the loaves a little more dense.

Ingredients For makeover zucchini bread

  • 3 c
    all-purpoe flour (can substitute 1 cup with whole wheat flour)
  • 1/2 tsp
    baking soda
  • 2 tsp
    baking powder
  • 2 tsp
    cinnamon
  • 1/2 tsp
    nutmeg
  • 1/4 tsp
    cloves
  • 1/4 tsp
    salt
  • 2
    eggs
  • 1/3 c
    canola oil
  • 1/2 c
    unsweetened applesauce
  • 1 1/2 c
    sugar
  • 1 tsp
    vanilla
  • 2 c
    shredded zucchini
  • 1/2 c
    chopped nuts
  • 1/2 c
    raisins (soak in boiling water for 10 minutes to soften and then drain)

How To Make makeover zucchini bread

    In a large bowl, combine the first 7 ingredients.

    In another large bowl, beat the eggs until frothy. Add the oil, applesauce, sugar and vanilla. Beat until blended.

    Stir into the dry ingredients until just moistened. (Will seem dry) Fold in the zucchini, raisins and nuts. (I used golden raisins for the color.)

    Divide among three 8 x 4 loaf pans that have been sprayed with regular or baking PAM.

    Bake at 350° for 40 - 50 minutes or until loaves test done. Cool for 10 minutes, remove from pans and cool completely on wire racks.
