Ingredients For macaroni and cheese with vegetables

8 ozpasta, bow-tie or ribbed

1 cmushrooms, sliced

1red bell pepper, chopped

2 cbroccoli florets

1/4 tsppepper

1/4 tsppaprika
-
1 tspbasil
-
1 Tbspparsley, fresh and chopped

1/2 cparmesan cheese, grated

1/2 ccheddar cheese, grated

3/4 cmilk
-
1/2 cvegetable stock
-
1 Tbspflour
-
3 Tbspbutter
-
1green onion, sliced
How To Make macaroni and cheese with vegetables

1Bring a large pot of water to boil; cook pasta until al dente.

2While pasta is cooking, in medium saucepan, melt 2 tablespoons of the butter.

3Remove from heat; add flour and stir until blended in.

4Whisk in stock and milk, stirring over medium heat until mixture comes to a boil and thickens; reduce heat to low.

5Stir in cheeses and seasonings; continue stirring until cheese is melted.

6Remove from heat and set aside.

7In a large skillet, melt remaining 1 tablespoon butter.

8Add remaining ingredients; cook vegetables, stirring constantly, for about 5 minutes, until tender/crisp, then reduce heat to low.

9When noodles are done, drain well.

10Toss with vegetables; stir in cheese sauce - Garnish with scallion curls.
