Source: My mom's best friend, Lola. This recipe is simple, easy, healthy and a great side dish or salad. I love it with roasted or grilled chicken (check out my Beer Can Chicken recipe). The dressing for this recipe is also the same one I use for my Cucumbers and Onions.

Ingredients For lola's green bean salad

1 canbaby lesure peas, drained (1-10oz. pkg frozen baby peas, thawed can also be used)

2 canfrench style green beans, drained

1 cchopped celery
-
1/2 cchopped green pepper
-
1/3 cchopped onion
-
1/4 cdiced pimento (in jar) (have used diced red pepper when out of pimento)

3/4 csugar (can use splenda)

1/3 capple cider vinegar
-
2 Tbspwater
-
1/2 tspsalt, (optional)
How To Make lola's green bean salad

1Mix together sugar (or splenda), vinegar, water and salt. Stir until sugar is dissolved. Set aside.

2Mix all vegetables together; pour dressing over vegetables and mix until combined. Cover and refrigerate until ready to serve.
