Ingredients For loaded cauliflower

1 lgcauliflower head, fresh, cut into florets

2 stickbutter
-
1 candiced tomatoes with garlic & onion, drained

1 tspgarlic powder
-
salt & pepper, to taste
-
16 ozcheddar cheese, shredded
-
8 slicebacon, cooked crisp & crumbled
-
6scallions, diced (both greens & whites)
-
8 ozsour cream, fat-free
-
1 envranch dressing mix, dry
-
2 Tbspchives, dried
How To Make loaded cauliflower

1In a large skillet, melt butter & then add cauliflower & cook over medium heat until tender, about 10 - 15 minutes.

2In same skillet sprayed with cooking spray & set over medium high heat. Add in tomatoes & garlic. Saute until heated through, 3 minutes.

3In a medium bowl, combine, cooled tomato mixture, sour cream, bacon, scallions, dry ranch dressing mix & chives. Set aside.

4Divide cooked cauliflower among 4 serving bowls & season with salt & pepper.

5Top each serving with 4 oz of the cheese & microwave for about 1 minute, or until the cheese is melted.

6Now top each serving with 1/4 of the tomato mixture & serve immediately.
