How To Make lima beans with pine nuts

1Heat olive oil in a wide, heavy skillet over high heat until hot. Add lima beans and shake the skillet to distribute them over the bottom of the pan.

2As the limas heat, mince pine nuts very fine. When the limas have cooked long enough to brown a little, add pine nuts and salt and stir.

3Lower heat to medium and continue to cook, stirring occasionally, until limas are cooked through and the pine nuts smell toasty, about five or 10 minutes.

4Limas will be firm; if you like them very soft, add water during the final cooking.
