One of my favorite batters for frying just about anything. Always light and crispy. Serve with warm marinara sauce. Yum!

Ingredients For ~ light crispy zucchini strips ~

  • 1/4 c
    corn starch
  • 1/2 c
    flour
  • 1/4 tsp
    season salt
  • 1 tsp
    baking powder
  • 1/8 tsp
    paprika
  • 1/2 c
    water plus 1 tablespoon
  • 1 Tbsp
    vegetable oil
  • Zucchini
    washed, sliced 1/4 inch thick - pat dry
  • Oil
    for frying

How To Make ~ light crispy zucchini strips ~

  • 1
    Combine dry ingredients in a bowl and mix well. In another bowl, mix wet ingredients well. Add the wet mix to the dry and mix well. Dry zucchini well, dip and fry zucchini to desired crispiness. Sprinkle with salt while hot. I sometimes sprinkle with Parmesan too!
