This is a delicious way to use leftover mashed potatoes! Can be served for breakfast, lunch dinner, or a snack!

Ingredients For leftover mashed potato puffs

1egg

1 cmixed shredded cheeses of choice

chopped green onion

salt and pepper

2beaten eggs

seasoned flour
-
breadcrumbs

parmesan cheese
How To Make leftover mashed potato puffs

1Mix Potatoes, egg, cheeses, onion, salt and pepper to taste. Refrigerate to set about a half hour

2Roll potatoes into small log shapes about two inches long

3Roll logs into flour, then beaten egg, then breadcrumbs mixed with parmesan cheese. Can be fried in oil immediately, or refrigerate again to set about a half an hour to ensure a crispy crust. Fry in 1/4 inch of oil heated to 350 degrees until golden brown and crispy.
