This is pretty easy to make, though there are a lot of ingredients. Don't let that scare you away. The squares are tender, and moist and so flavorful with the garlic and the onion and parmesan. I love garlic, so you can even use 2 cloves if you prefer. I have sprinkled extra parmesan over to the top on occasion after they are done baking. I hope this will become one of your favorite appetizers.

Ingredients For kim's zucchini squares

  • 2 c
    thinly sliced zuccini
  • 1/4 c
    minced onion
  • 2 Tbsp
    parsley
  • 1/2 tsp
    oregano
  • 3/4 tsp
    salt
  • 1 clove
    garlic minced
  • 3/4 c
    parmesan or romano
  • 4
    beaten eggs
  • 1 c
    flour
  • 1 1/2 tsp
    baking powder
  • 1/8 tsp
    black pepper
  • 1 Tbsp
    melted butter
  • 1/2 c
    vegetable oil

How To Make kim's zucchini squares

    In large bowl mix zucchini, onion, parsley, oregano, salt garlic and cheese. Stir in eggs and mix well.

    Add flour, baking powder, seasoned salt and pepper. Mix well, then add melted butter and oil and mix well.

    Pour into greased 13x9x2 inch casserole dish/pan and bake at 350 for 25 minutes or until golden. Cut in squares. Serve warm or cold. Delicious!
