This is pretty easy to make, though there are a lot of ingredients. Don't let that scare you away. The squares are tender, and moist and so flavorful with the garlic and the onion and parmesan. I love garlic, so you can even use 2 cloves if you prefer. I have sprinkled extra parmesan over to the top on occasion after they are done baking. I hope this will become one of your favorite appetizers.

Ingredients For kim's zucchini squares

2 cthinly sliced zuccini

1/4 cminced onion

2 Tbspparsley

1/2 tsporegano

3/4 tspsalt

1 clovegarlic minced

3/4 cparmesan or romano

4beaten eggs
-
1 cflour
-
1 1/2 tspbaking powder

1/8 tspblack pepper

1 Tbspmelted butter

1/2 cvegetable oil
How To Make kim's zucchini squares

1In large bowl mix zucchini, onion, parsley, oregano, salt garlic and cheese. Stir in eggs and mix well.

2Add flour, baking powder, seasoned salt and pepper. Mix well, then add melted butter and oil and mix well.

3Pour into greased 13x9x2 inch casserole dish/pan and bake at 350 for 25 minutes or until golden. Cut in squares. Serve warm or cold. Delicious!
