keto friendly/low carb smashed cauliflower

This garlic smashed cauliflower recipe is the best mock mashed potato recipe I've had yet! I had found a similar recipe years ago but tweaked it to my liking. I made it before I was Keto/Low Carb but just modified the recipe. So whether you're trying to maintain a healthier lifestyle or just want a tasty, filling, and satisfying side dish that goes with virtually any meat...this IS it!!! I hope everyone enjoys it as much as me and my family does. Enjoy! **Feel free to add more cream cheese and/or parmesan cheese if you need it thicker. Just depends on size of cauliflower head**

Ingredients For keto friendly/low carb smashed cauliflower

  • 1 lg
    head of cauliflower
  • 1/2 c
    grated parmesan cheese
  • 4 oz
    full fat cream cheese
  • 1 Tbsp
    chives (fresh or dried)
  • 1 tsp
    garlic powder (or to taste)
  • 1 tsp
    himilayan sea salt (or to taste)
  • 1/2 tsp
    pepper (or to taste)
  • 1 Tbsp
    butter

How To Make keto friendly/low carb smashed cauliflower

  • Using the immersion blender method to smash the cauliflower.  This method makes the texture nice and smooth just like mashed potatoes!

    Break up your head of cauliflower into large chunks and cook in a large pot of boiling water until tender. Then drain the cauliflower and place back into the pot and turn burner off. DO NOT add any milk or other liquids because the water absorbed in the cauliflower will be all the liquid you need. Then mash the cauliflower with an immersion blender or a potato masher while its still in the pot until there are no chunks. You could also puree the cooked cauliflower in a blender or food processer. I use a hand held immersion blender because it gets the cauliflower nice and smooth (as pictured), but you can just use what you have on hand!

    After the cauliflower is mashed and back on the stove top pan, turn the burner onto "low heat" and add 1/2 block (4 oz) cream cheese and stir until melted. Then add 1/2 cup of grated parmesan, chives, and spices.

    After everything is all mixed together, simply add a dollop of butter and it's ready to serve!! My family thinks it tastes better than mashed potatoes!
