While looking for side dishes to serve with Lamb Koftas, I found this recipe, use the freshest ingredients and don't be afraid to add or lessen the amount of chilies for your personal taste.

Ingredients For kachumbar - cucumber salad

1 lgonion, chopped fine

3tomatos chopped fine

1 lgcucumber, chopped fine

2green chiles, chopped fine

1/2 bunchcilantro, fresh, chopped very fine

1juice from 1 lemon or 2 limes

salt, to taste

1 tspsugar

1 tspvegetable oil

1/2 tspred chili powder
How To Make kachumbar - cucumber salad

1Mix all the vegetables together in a large salad bowl and chill. • In a small bottle (must have a tighly-fitting cover), mix the lime/lemon juice, oil, salt, sugar and chilli powder. Put the lid on and shake the bottle well to mix all the ingredients in it and dissolve the sugar. • Pour the dressing over the salad just before you are ready to eat. Mix well and serve.
