While looking for side dishes to serve with Lamb Koftas, I found this recipe, use the freshest ingredients and don't be afraid to add or lessen the amount of chilies for your personal taste.

Ingredients For kachumbar - cucumber salad

  • 1 lg
    onion, chopped fine
  • 3
    tomatos chopped fine
  • 1 lg
    cucumber, chopped fine
  • 2
    green chiles, chopped fine
  • 1/2 bunch
    cilantro, fresh, chopped very fine
  • 1
    juice from 1 lemon or 2 limes
  • salt, to taste
  • 1 tsp
    sugar
  • 1 tsp
    vegetable oil
  • 1/2 tsp
    red chili powder

How To Make kachumbar - cucumber salad

  • 1
    Mix all the vegetables together in a large salad bowl and chill. • In a small bottle (must have a tighly-fitting cover), mix the lime/lemon juice, oil, salt, sugar and chilli powder. Put the lid on and shake the bottle well to mix all the ingredients in it and dissolve the sugar. • Pour the dressing over the salad just before you are ready to eat. Mix well and serve.
