kabanzo - kale and garbanzo beans

I found this recipe in a stack of handwritten notes I had with me when we traveled. No idea where it came from. All I wrote down was the list of ingredients. When I put them together it was so good, definately a keeper, especially with our fresh kale from the garden. I have also seen chopped fresh kale in the produce section of the grocery stores.

Ingredients For kabanzo - kale and garbanzo beans

  • 2-3 Tbsp
    olive oil
  • 1 md
    onion
  • 3/4 c
    vegetable /chicken broth
  • 1/2 c
    cooked brown rice
  • 1 tsp
    cumin
  • 1/2 tsp
    paparika
  • 1/4 tsp
    salt
  • 1 bunch
    fresh kale, chopped
  • 1 c
    garbanzo beans

How To Make kabanzo - kale and garbanzo beans

    Saute onion in olive oil
  • 2
    Mix in garbanzo beans, broth and cooked rice. Add cumin, paprika and salt.

    Stir in chopped kale and cook until tender.
