This vegetable medley is great to have on hand. Use as little as you want for each dish and can easily be doubled. And a great way to use the vegetables coming this spring and summer.

Ingredients For janet's magical veggi mix

  • 1 md
    onion chopped ( about 1/2 cup )
  • 1 md
    zucchini chopped ( about 1 cup )
  • 4 to 5 oz
    mushrooms sliced ( about 1 cup )
  • 1 -2 Tbsp
    olive oil
  • 1/2 tsp
    mrs. dash ( any flavor )
  • 1 md
    cucumber chopped about1/2 inch cube
  • 1 md
    yellow squash chopped in 1/2 inch cube

How To Make janet's magical veggi mix

    Heat the olive oil over medium heat.

    Once hot, add the onion and bell pepper cook stirring frequently, until starting to soften, about 5 minutes.

    Add the zucchini and mushrooms until they have softened slightly. Remove from heat.

    Divide into small portions and freeze until ready to use.

    This mixture can be used in Tacos, Quesadillas, Nachoes or what ever you want. Great along a steak as a side salad
