Ingredients For italian zucchini boats

2 lgfresh zucchini

4 ozshittake mushrooms diced

1 smonion diced
-
2 clovegarlic minced

3sweet italian sausage casing removed

1 1/2 cspaghetti sauce
-
grated parmesan cheese
-
1 1/2 cmozzarella cheese shredded

salt

fresh basil
How To Make italian zucchini boats

1Slice the skinny necks of the zucchini off and keep for another use. Cut the zucchini's in half and scoup out the seeds with a melon baller. Place on a baking dish and sprinkle with salt.

2In a large skillet add a little oil and saute the onion, mushrooms and garlic. Sprinkle with salt and cook until softened. Add the sausage and break it up cooking until done. Stir in the spaghetti sauce.

3Fill each boat with the sausage mixture. Top with parmesan cheese. Bake at 350 degrees for 40 minutes. Add the mozzerella cheese and bake until the cheese is melted and bubbly

4Top with fresh Basil
