Turmeric is an amazing ingredient. It is an excellent anti-inflammatory, a natural antiseptic, liver cleanse, and many more uses. I asked my Indian friend at work for some Turmeric recipes and her answer was "everything I cook"! She then gave me this easy recipe for rice. I've listed the recipe with the veggies I used, but you can use whatever you like! When I make it, I'll use whatever I have in the fridge that needs using up.

Ingredients For indian-style veggie brown rice

  • 2 tsp
    coconut oil
  • 1 sm
    onion, chopped
  • 3 md
    carrots, sliced
  • 1 md
    red bell pepper, chopped ribs and seeds removed
  • 1 clove
    garlic, chopped fine
  • 3/4 tsp
    cumin, ground
  • 1 tsp
    turmeric, ground
  • 1/4
    cabbage head, chopped
  • 5 stalk
    fresh kale, chopped
  • 6
    mushrooms, fresh, sliced
  • 1 c
    brown rice
  • 2 1/2 c
    water
  • salt to taste
  • 1/4 bunch
    cilantro, fresh

How To Make indian-style veggie brown rice

    Melt coconut oil in a large sauce pan.

    Saute onions, carrots, red bell pepper until onions clear.
  • 3
    Add garlic, cumin and turmeric.
  • 4
    Add kale, cabbage, and mushrooms.
  • 5
    Add brown rice and stir then add water.
  • 6
    Bring to a boil, then simmer until all water is absorbed. Salt to taste.

    Serve garnished with fresh cilantro.
