indian-style veggie brown rice
Turmeric is an amazing ingredient. It is an excellent anti-inflammatory, a natural antiseptic, liver cleanse, and many more uses. I asked my Indian friend at work for some Turmeric recipes and her answer was "everything I cook"! She then gave me this easy recipe for rice. I've listed the recipe with the veggies I used, but you can use whatever you like! When I make it, I'll use whatever I have in the fridge that needs using up.

Ingredients For indian-style veggie brown rice

2 tspcoconut oil

1 smonion, chopped

3 mdcarrots, sliced

1 mdred bell pepper, chopped ribs and seeds removed

1 clovegarlic, chopped fine

3/4 tspcumin, ground

1 tspturmeric, ground

1/4cabbage head, chopped

5 stalkfresh kale, chopped

6mushrooms, fresh, sliced

1 cbrown rice
-
2 1/2 cwater
-
salt to taste

1/4 bunchcilantro, fresh
How To Make indian-style veggie brown rice

1Melt coconut oil in a large sauce pan.

2Saute onions, carrots, red bell pepper until onions clear.

3Add garlic, cumin and turmeric.

4Add kale, cabbage, and mushrooms.

5Add brown rice and stir then add water.

6Bring to a boil, then simmer until all water is absorbed. Salt to taste.

7Serve garnished with fresh cilantro.
