Roasted carrots are so sublime! Add tangy balsamic, sweet honey, and the richness of goat cheese bring them up a notch!

Ingredients For honey balsamic roasted carrots

  • 1 lb
    carrots
  • 1 Tbsp
    olive oil
  • 2 Tbsp
    balsamic vinegar
  • 2 Tbsp
    honey
  • 2 clove
    garlic,minced
  • 1 tsp
    dried thyme
  • 1/4 tsp
    salt
  • 1/2 tsp
    cracked pepper
  • 1/4 c
    goat cheese, crumbled

How To Make honey balsamic roasted carrots

    Preheat oven too 425F.
  • 2
    Cut carrots in half vertically, then slice in 2" segments.
  • 3
    Whisk together olive oil, balsamic vinegar, honey, garlic, thyme and salt and pepper. Toss carrots with balsamic mixture.

    Spread carrots out onto parchment lined baking sheet (for easier clean up), and roast for 20-25 minutes.

    Crumble goat cheese over carrots and serve.
