1/2red onion thinly sliced

6 clovegarlic minced

1/2lemon sliced

1 sprigrosemary

3 sprigoregano

3 sprigthyme

olive oil
- MASHED POTATOES

4 lgrusset potatoes peeled

3 Tbspbutter
-
3 Tbspminced green onions

3 Tbspfresh parsley chopped

salt and pepper

1/2 tspnutmeg
-
milk
-
shredded parmesan cheese

fresh pea shoots for garnish
How To Make herb roasted cauliflower w mashed potatoes

1Preheat oven 400 degrees. Peel the head of cauliflower and break into florets. Place the lemon slices in bottom of baking dish. Top with thyme sprigs, rosemary sprigs, & oregano sprigs.

2Place the cauliflower over the herbs and lemons. Top with the onion . Season with salt, pepper, garlic, and paprika. Drizzle a generous amount of olive oil over the whole dish. Place in the oven and roast for 30 to 40 minutes.

3While the cauliflower is roasting. Peel the potatoes, slice them and place in boiling salted water. Cook until a fork goes easily through. Place the butter, green onions and parsley in a bowl. Drain the potatoes and with a ricer add the potatoes to the bowl with the butter mixture. Stir the potatoes and add milk to make a creamy consistency. Season with salt, pepper, and nutmeg.

4Remove the cauliflower from the oven. Discard the sprigs of herbs, and lemon slices. Place the mashed potatoes on a plate. Top the potatoes with the cauliflower mixture then sprinkle with parm cheese and top with a couple of pea shoots,
