I love tomatoes, and anything fried. If you have excess tomatoes, and you like fried, try these. Everything comes together quickly. The next time I have good firm, not overly ripe tomatoes, I am going to experiment with trying to bake, so not so many calories. Perhaps spraying broiling pan with cooking spray, would broiling work, or would tomatoes get too brown too quickly. Could still try baking. Anyway, frying is fantastic. Enjoy!!

Ingredients For herb fried tomatoes

large, ripe firm tomatoes, cut in 1/4" slices

1 1/2cups crushed herb seasoned stuffing mix

1egg, beaten

olive oil for frying

2 tbsshredded cheddar cheese
How To Make herb fried tomatoes

1Coat tomato slices with stuffing mix, dip in egg & then coat again with stuffing mix.

2Heat oil in heavy skillet.(I prefer cast iron). Add tomato slices, cook until brown, turning once.

3Transfer to serving dish & sprinkle with shredded cheese or grated parmesan.
