Right before New Years, I had very little food in the house, ( except all the foods for the upcoming party,) and I looked through the cabinets and just started gathering items. Same thing with the refrigerator. I finally just started making this and as I went along, I wrote everything down, just in case it actually tasted good! Hahaha. I could not believe how such a simple dish was so fabulous that it went very, very quick. Personally, I couldn't stop eating it! Even my picky grand kids loved it. Enjoy:-)

Ingredients For heavenly creamy pasta bake w/ chicken

  • 1 lb
    elbow macaroni or other small pasta
  • 6 Tbsp
    butter
  • 1 md
    onion, chopped
  • 2 tsp
    minced garlic
  • 8 oz
    light cream cheese, cut into cubes
  • 1-1/2 c
    1% milk
  • 1/2 c
    low sodium chicken broth
  • 3/4 c
    grated parmesan cheese
  • pinch
    nutmeg
  • 2 c
    cooked, cubed or shredded chicken breast
  • 2 c
    frozen broccoli florets, thawed
  • salt and pepper to taste
  • 1 Tbsp
    chopped fresh parsley
  • 4 Tbsp
    butter, melted
  • 3/4 c
    whole wheat bread crumbs, i used 4c brand

How To Make heavenly creamy pasta bake w/ chicken

    Heat oven to 350. Lightly spray a 3-qt casserole dish w/cooking spray. Cook pasta al dente style, drain and set aside. In lg pot over medium heat, melt 6 tbsp butter.

    Add onion and garlic. Saute about 5 mins. Add cubed cream cheese and stir until smooth. Whisk in milk and chicken broth until it starts to thicken. This takes about 3-4 minutes.

    Stir in 1/2 the parmesan cheese and nutmeg. Stir in chicken and broccoli. Season w/ salt and pepper. Let the whole thing come to a simmer. Stir in pasta until well coated. Spoon mix into casserole dish. In small bowl, mix together the bread crumbs, remaining parmesan cheese and melted butter. Sprinkle bread crumb mix over casserole and bake uncovered about 30 minutes, or until it's bubbly and lightly browned on top.
