I make Harvard Beets for my girlfriend's kids and have to double or triple this recipe for them. Even people who say they don't like beets seem to enjoy these beets.

Ingredients For harvard beets

2 canbeets, diced, sliced or baby whole

2/3sugar

2 Tbspcornstarch

1/2 cwhite vinegar

3/4 tspkosher salt

1/4 cbutter
How To Make harvard beets

1Drain beets, reserving 1/2 the liquid. Mix sugar and cornstarch in a saucepan. Blend in reserved liquid, vinegar and salt.

2Bring to a boil, stirring constantly. Reduce heat and simmer for 2 minutes. Add beets and simmer for 15 minutes longer.

3Stir in butter just before serving.
