All who know me are aware that I love to grill. This is a recipe I make for myself. My children hate eggplant, zucchini, etc. But I love them. So when they are out of town, I indulge!!

Ingredients For grilled ratatouille

  • 2 lg
    vidalia onions, peeled
  • 1 md
    eggplant
  • 3 md
    zucchini (about 1 1/2 pounds)
  • 2 lb
    plum tomatoes
  • 1 md
    green bell pepper
  • 1/4 c
    plus 2 tablespoons olive oil, divided
  • cooking spray
  • 3 clove
    garlic, minced
  • 3/4 tsp
    fresh thyme, chopped
  • salt, to taste
  • pepper, to taste
  • 2 Tbsp
    fresh parsley, chopped

How To Make grilled ratatouille

    Cut the onion and eggplant into 1/2 inch slices; set aside. Cut the zucchini and plum tomatoes in half lengthwise; set aside. Quarter the green pepper; set aside. Lightly brush the vegetables with 3 tablespoons olive oil.

    Place eggplant, onion, zucchini, and green pepper on a grill rack coated with cooking spray. Grill, covered, over medium-hot coals (300 to 400º) for about 10 minutes, turning occasionally. Add the plum tomatoes and grill for an additional 2-3 minutes.

    Remove the vegetables from the grill and let cool slightly. Coarsely chop the vegetables and set aside.

    Saute the garlic in the remaining 3 tablespoons oil in a large skillet over medium heat for 1 minute. Add the reserved vegetables and thyme, and saute 10 minutes. Add salt and pepper to taste. Sprinkle with the fresh chopped parsley and serve immediately. Enjoy!!
