Everything is grilled except the onions. I did grill those, but they tasted too bitter, so I added fresh chopped ones, and mozzarella.

Ingredients For grilled corn salad

  • 10
    ears corn on the cob
  • 1
    red bell
  • 1
    yellow bell or orange
  • 2-3
    anahiem pepper
  • 1/2
    red onion
  • 1 tsp
    black pepper
  • 2 tsp
    olive oil, opt
  • 2 Tbsp
    chopped fresh cilantro
  • 4 oz
    cheese, cubed (mozzarella)or cotija, crumbled
  • couple squirts of lime juice

How To Make grilled corn salad

    Grilling the corn is optional, but you WILL want to grill or roast peppers. Remove husks and wash corn. Cut red and yellow bell in half and remove seeds.

    Grill till slightly charred. Remove corn from cobs. Remove skin from Anaheim pepper and remove seeds. Chop peppers. Finely dice red onion. Cube cheese or crumble. Place all ingredients in large bowl. Add Mrs. dash and olive oil and stir till well blended.
