I like this as a side dish when we have grilled steak or a marinated flank steak. The balsamic and Parmesan touch really adds a lot of flavor.

Ingredients For green beans with mushrooms, balsamic and parmesan

1 lbfresh green beans, cut into 2-inch strips

8 ozsliced button mushrooms (brown cremini mushrooms work well, too)

1 mdonion, halved and then cut into thin half-rings

1 1/2 Tbspolive oil

1 Tbspbalsamic vinegar

1 tspsalt

1 tspblack pepper
-
1 Tbspfresh basil, chopped

2 Tbspparmesan cheese, finely grated
How To Make green beans with mushrooms, balsamic and parmesan

1Preheat oven to 450°F/230°C.

2Put beans, mushrooms and onion into a large zip-lock bag (or a large mixing bowl).

3Whisk together the olive oil, vinegar, salt and pepper. Pour the dressing over the vegetables and shake bag until vegetables are well coated.

4Arrange vegetables on a large baking sheet, spreading them out so beans and mushrooms aren't too crowded. Roast in oven for 20 to 30 minutes or until beans are tender-crisp and all liquid from the mushrooms has evaporated. Sprinkle chopped basil and grated Parmesan cheese on top, and serve immediately.
