I made this as a side dish for Christmas dinner, and it was so good. I'm posting the recipe here so it's convenient when I want to make it again. The colors from the green beans and bright red cranberries made this such a great choice for the Christmas dinner table, but it would be a delicious side dish for just about any time of the year.

Ingredients For green beans with bacon, cranberries and goat cheese

4 slicebacon, cooked crisp and chopped into small pieces

1 mdshallot, peeled and thinly sliced

1 clovefresh garlic, minced

4 ozbutton mushrooms, sliced and coarsely chopped (optional)

1/3 cupdried cranberries
-
2 lbfresh green beans, ends trimmed

2 Tbspwater
-
1/2 tspsea salt
-
1 tspblack pepper
-
2 ozgoat cheese, crumbled
How To Make green beans with bacon, cranberries and goat cheese

1Cook bacon in a large skillet over medium heat for about 6 to 8 minutes or until crisp. Set cooked bacon aside to cool a bit. When it's cool enough to handle, chop the bacon into small pieces.

2Drain the excess grease from the skillet. Using the same skillet, cook the shallot, garlic, and mushrooms (if using), stirring occasionally, for about 3 to 4 minutes or until the shallot is soft but not browned.

3Stir the cranberries, green beans, and water into the shallot mixture. Cover skillet, and cook about 5 to 6 minutes or until the beans are crisp-tender. Remove skillet from heat. Season with salt and pepper.

4Stir the chopped bacon into the bean mixture until well blended.

5Transfer the bean mixture to a serving platter. Evenly sprinkle the goat cheese across the top, and serve immediately while the beans are still warm.
