Easy to make and only 10 inexpensive ingredents. Taste like it took hours to make but in reality, it takes only a few minutes. I make this to take to potluck suppers,Bunko dinners with our friends & game night at our church. I have made this dish in place of Greenbean Casserole at Thanksgiving and Christmas dinners. Everyone asks me to make this,my family loves it I hope you do too!

Ingredients For green beans, walnut & feta cheese salad

  • 3/4 lb
    3/4 pound of green beans (4 cans of drained green )beans
  • 6 Tbsp
    light extra virgin olive oil
  • 1/4 c
    packed,finely chopped,fresh mint leaves
  • 1/2 c
    diced red onion
  • 2 tsp
    white wine vinegar
  • 1/4 tsp
    minced garlic
  • 1/8 tsp
    black pepper
  • 1/2 c
    toasted or roasted & chopped walnuts or pecans
  • 1/2 c
    crumbled feta cheese

How To Make green beans, walnut & feta cheese salad

    Wash beans,trim ends and cut into 2 inch sections. Steam until just tender (al dente).

    Combine oil,mint,vinegar,salt,pepper,garlic into a blender and process until smooth.

    Put the green beans into a shallow serving dish, sprinkle with nuts, onion and feta cheese. Toss with dressing just before serving. This is hood chilled or room temp. I usually add sliced red and yellow bell peppers. I have also used bacon pieces and halved baby tomatoes and yellow wax beans to add extra color and taste. The variations are remarkable!
