Easy to make and only 10 inexpensive ingredents. Taste like it took hours to make but in reality, it takes only a few minutes. I make this to take to potluck suppers,Bunko dinners with our friends & game night at our church. I have made this dish in place of Greenbean Casserole at Thanksgiving and Christmas dinners. Everyone asks me to make this,my family loves it I hope you do too!

Ingredients For green beans, walnut & feta cheese salad

3/4 lb3/4 pound of green beans (4 cans of drained green )beans

6 Tbsplight extra virgin olive oil

1/4 cpacked,finely chopped,fresh mint leaves

1/2 cdiced red onion
-
2 tspwhite wine vinegar
-
1/4 tspminced garlic
-
1/8 tspblack pepper
-
1/2 ctoasted or roasted & chopped walnuts or pecans

1/2 ccrumbled feta cheese
How To Make green beans, walnut & feta cheese salad

1Wash beans,trim ends and cut into 2 inch sections. Steam until just tender (al dente).

2Combine oil,mint,vinegar,salt,pepper,garlic into a blender and process until smooth.

3Put the green beans into a shallow serving dish, sprinkle with nuts, onion and feta cheese. Toss with dressing just before serving. This is hood chilled or room temp. I usually add sliced red and yellow bell peppers. I have also used bacon pieces and halved baby tomatoes and yellow wax beans to add extra color and taste. The variations are remarkable!
