My Mom used to make this often when I was growing up. It is great as a side dish with anything; but when I was newly married and on a tight budget, I made it with a pound of bacon and doubled the beans for a main dish. We still make it today but the recipe has changed a bit to use fresh ingredients from the garden. I posted the original...feel free to change it up!

Ingredients For green beans creole

6 slicebacon

3/4 conions, chopped

1/2 cgreen pepper, chopped

2 Tbspflour

2 Tbspbrown sugar

1 Tbspworcestershire sauce

1/2 tspsalt

1/4 tsppepper
-
1/8 tspdry mustard

16 ozcan peeled tomatoes

1 cangreen beans, french style
How To Make green beans creole

1Cook bacon until crisp and remove to paper toweling. Save 3T fat in skillet.

2Add onion and green pepper and cook until tender. Blend in spices.

3Add tomatoes with juice. Cook and stir, breaking up tomatoes, until mixture thickens. Add green beans and heat through.

4Sprinkle with reserved bacon to serve.
