Ingredients For green beans & carrots w/ tomato, garlic & ginger

  • 2
    red onions, chopped
  • 1/3 c
    canola oil
  • 3 oz
    tomato paste (1/2 6-oz. can)
  • 4 c
    fresh green beans, cut into thirds
  • 3
    carrots, cut into matchsticks
  • 2-3
    tomatoes, chopped
  • ginger - to your liking
  • garlic - to your liking
  • salt to taste

How To Make green beans & carrots w/ tomato, garlic & ginger

    Saute onions on medium heat until onions become translucent. Add the oil and continue cooking for several more minutes.

    Stir in the tomato paste and simmer several minutes coating the onions.

    Add the green beans and carrots, stir well and cover. Continue cooking on medium heat for 10-15 minutes; then add the tomatoes, ginger, garlic, and salt.

    Simmer until all of the vegetables are tender.
