Fresh or frozen green beans usually taste better a little under-done rather than limp and over cooked.. To cook ahead of time, place them in a saucepan with a pinch of sugar and pour boiling water on top. Do not cover, boil fast. Drain. Place in a bowl and cover with ice cubes, and refrigerate for 2 to 12 hours. Then reheat with only the liquid that clings to them over medium heat and they will be ready to serve. Nancy...7/2/13
