I have been making my green beans like this for a couple of years now. My son is grown and doesn't live at home, but last summer, he was home when I made these, and although he has never cared much for green beans, he loved them! Recently, he has been on a diet and is longing for all sorts of flavorful food he can't have, so he called me to ask how to make these. He just wanted something flavorful, and flavorful these are! Bacon, red sweet pepper, onion, garlic, and olive oil make these Green Bean Heaven!

Ingredients For green bean heaven

  • 1 lb
    blue lake, italian, or other fresh green beans, ends snapped off
  • 1/2--3/4 c
    onion, chopped
  • 1 Tbsp
    minced garlic
  • 1/3 c
    red bell pepper, chopped
  • 1 slice
    bacon, cut up into pieces
  • 1 Tbsp
    olive oil
  • black pepper and sea salt to taste (i don't use much salt when i have garlic, but everyone is different.)
  • 1/2--3/4 c
    water or chicken broth

How To Make green bean heaven

    Snap ends off of fresh green beans. Wash and then place into pan. Add chopped onion, minced garlic, chopped red bell pepper, bacon, and olive oil. Add 1/2 -3/4 cup of water or chicken broth.

    Turn burner on medium until it reaches a boil; sprinkle in sea salt and black pepper to taste, and then turn on low and simmer for 20-25 minutes or until tender. I like mine with a little bite (crunch) left in them. It usually takes about 20 minutes to get to this point.
