    garlic, minced
  • 3/4 c
    olive oil, extra virgin

    tomato sauce
  • 2 tsp
    kosher salt

    freshly ground black pepper
  • fresh parsley, chopped
  • fresh mint, chopped

    potatoes peeled and quartered
  • 1 c
    water

    carrots, sliced, optional
  • 1/4 c
    celery, chopped, optional

    canned white beans, drained,optional

How To Make greek string beans and potatoes in tomato sauce

    Sauté onions and garlic lightly in olive oil. Add tomato sauce, salt and pepper and simmer about 15 minutes. Add remaining ingredients. Cover and cook slowly 1 hour or til tender. Note: try adding garlic and cumin. You can add 1 1/2-2 inch cubes of lamb shoulder sautéed with onion and garlic and make the recipe into a stew
