1 1/2 lbsmall new potatoes, scrubbed and dried

2 tsplemon juice, freshly squeezed

1 1/2 tspdried oregano

1/2 cfeta cheese, crumbled

2 tsplemon zest, finely grated

1/4 cflat-leaf parsley, chopped
How To Make greek lemon new pototoes with feta cheese

1In large skillet, heat olive oil. Add potatoes in a single layer; cover and cook over medium-low heat about 20 to 30 minutes, or until light golden brown. Shake skillet occasionally.

2Add lemon juice, oregano, salt and black pepper. Cover and cook over low heat 15 minutes, or until potatoes are tender.

3Sprinkle potatoes with feta cheese, lemon zest and parsley. Serve hot, warm or at room temperature.
