I found this recipe in the first WW cookbook I bought. I have made it several times over the years.

Ingredients For greek green beans

  • 1 lb
    green beans, trimmed and halved
  • 14 1/2 oz
    can diced tomatoes (no salt added)
  • 1
    onion, coarsely chopped
  • 1
    small all-purpose potato, cubed
  • 2 tsp
    dried oregano
  • 2 tsp
    olive oil, extra virgin
  • 1/4 tsp
    salt (optional, i omit)
  • 1/4 tsp
    freeshly ground black pepper
  • freshly grated parmesan cheese

How To Make greek green beans

  • 1
    In a large nonstick saucepan, bring the beans, tomatoes, onions, potato, oregano, oil, salt and pepper to a boil. Reduce the heat and simmer, covered, stirring as needed, until the vegetables are tender ad the flavors are blended, about 1 hour. Transfer to a serving dish and sprinkle with parmesan cheese.
