Ingredients For gratin of red beans (new orleans style)

3 lgonions, coarsely chopped

2 Tbspbread crumbs

2 cankidney beans, rinsed and drained

salt and pepper to taste

1bay leaf

1 canchopped tomatoes, 14 ounces

1/4 tspdried oregano
-
1/2 tspdried thyme
-
1 dashcayenne pepper
-
1 tspcoriander seeds
-
1/2 tspcumin
-
4celery ribs, chopped
-
4red pepper, chopped
-
1 cvegetable stock
-
2 Tbspparmesan cheese, grated
How To Make gratin of red beans (new orleans style)

1Preheat oven to 400 degrees F.

2Put the onions in a frying pan with 6 fl or 180 ml of stock.

3Cover and boil for 5 minutes.

4Uncover. Reduce heat somewhat and simmer until amber brown and beginning to stick to the pan.

5Stir in peppers, celery and a splash of stock. Stir and cook until the added vegetables are softened.

6Stir in cumin, coriander, cayenne pepper, thyme, oregano tomatoes, bay leaf, salt, pepper and wine.

7Simmer, stirring occasionally for 20 to 30 minutes until thick and savoury.

8Stir in the beans.

9Spread in a baking dish.

10Sprinkle with a mixture of bread crumbs and grated cheese.

11The recipe can be prepared to this point and refridgerated until needed.

12Bake the beans for 30 minutes uncovered until bubbling and browned on top.
