I used to hate cooked spinach (esp. from a can- yuck!) but wilting fresh spinach with a bit of garlic is a whole different ballgame!

Ingredients For garlic sauteed spinach

8 ozbaby spinach leaves

2 tspolive oil
-
2 clovegarlic, minced or thinly sliced

1/2 tspkosher salt, or to taste

1/4 tspblack pepper, or to taste

1 tspbutter
-
lemon juice to serve

salt and pepper, to taste
How To Make garlic sauteed spinach

1If spinach has not been washed, wash to remove any grit. Pat dry with paper towels.

2In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned.

3Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes.

4Uncover the pot, turn the heat on high, and cook the spinach for another minute. Keep stirring until all the spinach is wilted. Place into a serving bowl and top with the butter, a couple squeezes of lemon, and a sprinkle of sea salt. Serve hot.
