Ingredients For garden stuffed squash

4-6 mdyellow squash

1 lgsweet onion, chopped

1 mdgreen bell pepper, chopped

1 mdtomato, chopped

1/2 tspkosher salt

1/4 tsppepper

1/2 tspbasil
-
1/2-2/3 ccheddar cheese, shredded

4 slicebacon, cooked and crumbled
How To Make garden stuffed squash

1Peheat oven to 400 degrees. Boil squash 8 minutes; cool. When squash is cool enough to handle, cut in half lengthwise and discard seeds.

2Combine: onions, bell pepper, tomato, salt, pepper, basil and cheddar cheese. Fill each hollowed out squash with mixture. Dot with butter. Top with bacon crumbles.

3Bake uncovered at 400 degrees for 20 minutes.
