Ingredients For fruity sweet potato bake

2 can(20 ounces) sweet potatoes, drained and sliced

1 cpacked brown sugar

1-1/2 Tbspcornstarch

1/4 tspsalt

2 can(8 ounce) crushed pineapple, drained

3/4 creserved pineapple juice and water

1/4 cbutter
-
2bananas, not ripe, thickly sliced

mini-marshmallows
How To Make fruity sweet potato bake

1Put 1/2 of sweet potatoes in a 2 quart casserole. Mix sugar, salt and cornstarch together well in a saucepan.

2Add pineapple, pineapple juice and butter. Bring to a boil, stirring often to thicken. Spread banana slices over potato in casserole. Pour pineapple mixture over banana.

3Top with remaining potato, making as smooth as possible Bake covered at 350 degrees for 30 minutes.

4Cover with marshmallows. Return to oven, uncovered for about 7 minutes until marshmallows are lightly browned.
